The Crémant de Bourgogne Chardonnay Brut Bailly-Lapierre is produced in Burgundy near Auxerre, where the Bailly-Lapierre cooperative has brought together 71 winegrowers since the 1970s to craft high-quality sparkling wines.
The Chardonnay grapes are hand-harvested and carefully transported in small crates to preserve their quality. After a gentle pressing, only the first press juice (cuvée) is used. Alcoholic fermentation is followed by malolactic fermentation and the careful blending of wines from different terroirs.
The second fermentation takes place in bottle following the traditional method, with 16–18 months of aging on the lees in the Maison’s spectacular underground cellars located 50 meters below ground in ancient limestone quarries. This long maturation develops aromatic complexity and a fine, persistent mousse.
In the glass, the wine shows a bright straw-yellow color with fine, persistent bubbles. The nose reveals aromas of white flowers, apple, pear and pineapple, alongside mineral notes, yeast, and fresh bread crust.
On the palate it is dry, fresh and well-balanced, with lively acidity, elegant minerality, and a pleasant fruity persistence.
Perfect as an aperitif, it also pairs beautifully with charcuterie, delicate risottos, seafood dishes and shellfish.
