Bailly-Lapierre is one of the leading producers of Crémant de Bourgogne, located in the village of Bailly near Chablis. Founded in 1972 as a cooperative of winegrowers, the winery has become a benchmark for Burgundy sparkling wines, produced using the traditional method and aged in spectacular underground limestone cellars.

The village of Bailly, located about twenty kilometers southeast of Chablis, is often considered the birthplace of Crémant de Bourgogne. Here, in 1972, the Bailly-Lapierre cooperative was founded, bringing together local winegrowers dedicated to producing high-quality sparkling wines from Burgundy’s classic grape varieties, particularly Chardonnay and Pinot Noir.

The winery played an important role in the creation of the Crémant de Bourgogne AOC, officially recognized in 1975 by the INAO as the first Crémant appellation in France.

One of the most remarkable features of Bailly-Lapierre is its impressive underground limestone cellars, located about 50 meters below ground. These historic quarry galleries extend over four hectares and store up to five million bottles, resting in naturally ideal conditions for sparkling wine production: a constant temperature of around 12°C, high humidity and soft lighting.

The wines are produced using the traditional method, with secondary fermentation in bottle and extended aging on the lees. This process results in Crémants that combine elegance, freshness and fine bubbles, showcasing the quality and character of Burgundy sparkling wines.

Today Bailly-Lapierre produces around 3.5 million bottles per year and exports worldwide, contributing to the international reputation of Crémant de Bourgogne.
