180 Jours Domaine du Mortier
180 Jours by Domaine du Mortier is a truly distinctive wine, crafted through a natural and artisanal winemaking process. Made from Cabernet Franc grapes grown on over 70-year-old vines, it benefits from clay-limestone soils rich in tuffeau, a characteristic stone of the Loire Valley that enhances the wine’s minerality and depth.
What sets 180 Jours apart is its exceptionally long maceration period: whole grape clusters remain in contact with the juice for 180 days inside small 220-litre barrels. Throughout fermentation, the barrels are rotated daily to gently and gradually extract aromas and structure. After this lengthy process, the wine is racked in spring and aged for another year in the same barrels, without any added sulphites or chemical interventions.
The result is a wine with remarkable character, offering an unexpected aromatic complexity and refined elegance. The nose reveals intense notes of ripe red fruits, sweet spices, and delicate floral hints, while the palate is smooth, well-balanced, and persistent. Despite its depth, it retains a freshness that makes it enjoyable right away, while also having excellent aging potential, evolving beautifully for up to 10 years.
