Erbaluce di Caluso “Macerato” 2021 Cantina della Serra
The Erbaluce di Caluso “Macerato” 2021 from Cantina della Serra is a bold and expressive interpretation of this native Piedmont grape, crafted through an ancient and unconventional winemaking method. Inspired by traditional “red-style” vinification — a week-long maceration on the skins, rarely used for white wines — this approach enhances texture, depth, and aromatic complexity.
Sourced from Erbaluce vines trained on pergola and espalier systems, with yields limited to 80 quintals per hectare, the grapes are harvested in mid-September to capture ideal ripeness. After destemming, the must remains in contact with the skins for about a week before being transferred to a combination of amphora, cement, and tonneau, where it ages for 12 months. Each vessel contributes unique nuances: freshness from the cement, structure from the wood, and purity from the amphora.
In the glass, it shows a pale golden hue. The bouquet opens with lime zest, aromatic herbs, and subtle balsamic hints. The palate is vibrant and citrus-driven, featuring bergamot, bay leaf, and mineral freshness, with a pleasantly dry and persistent finish.
This Erbaluce “Macerato” is a modern expression of ancient enology, perfectly balancing authenticity and experimentation. Ideal with crispy sage leaves, fried seafood, or delicate fish dishes, it represents Cantina della Serra’s passion for revealing new facets of the Erbaluce grape.
