The Erbaluce di Caluso Sparkling “Scelte di Vite” from Cantina 366 is one of the finest Classic Method expressions of the native Erbaluce grape, cultivated on pergola-trained vines in Agliè, near Turin. Harvesting takes place in early September with careful monitoring of grape ripeness to ensure perfect balance of acidity, sugars, and aromas. Grapes are hand-picked, destemmed, and gently pressed, with the must fermenting in stainless steel tanks at controlled temperatures, preserving freshness and delicate floral notes.
After the base fermentation, the wine undergoes tirage for secondary fermentation in the bottle following the Classic Method, aging on lees for 30 months. This extended maturation develops aromatic complexity and transforms the effervescence into an elegant, persistent stream of bubbles.
In the glass, it shows an intense straw yellow color, bright and lively. The bouquet is rich and harmonious, with floral notes of acacia, fruity hints of apple and citrus, and subtle biscuit aromas, reflecting lees aging. On the palate, it is fresh, savory, and well-balanced, with recurring citrus and fruit notes and a long, persistent finish.
