Canavese DOC Bianco “Mezzavilla” 2020 Terre Sparse
The Canavese DOC Bianco “Mezzavilla” 2020 by Terre Sparse is crafted from old vines over 70 years old, trained in the traditional pergola canavesana system and rooted in morainic soils with medium texture. These historic vineyards produce wines with remarkable depth and character.
Harvest takes place in late September, with manual picking in the early morning to preserve freshness and aromatic integrity. Once in the cellar, grapes are immediately destemmed and crushed, followed by a cold maceration (criomaceration) to enhance aromatic extraction.
After gentle pressing and natural clarification, fermentation occurs at controlled temperature, initiated by a pied de cuve to ensure healthy yeast activity. The wine then ages in stainless steel on fine lees for about 2 months, gaining complexity and texture, followed by a short period in bottle.
In the glass, it displays a bright straw yellow color with greenish reflections. The bouquet is clean and intense, featuring acacia flowers, hay and subtle herbal notes. On the palate, it is full and enveloping, supported by balanced freshness and elegant minerality.
“Mezzavilla” is a wine that combines tradition and technical precision, ideal with appetizers, delicate pasta dishes and fish, while also offering short-term aging potential. A refined expression of Canavese white wines.
