Erbaluce di Caluso “Eolga” 2021 by Ilaria Salvetti is a refined expression of the native Erbaluce grape, a symbol of the Canavese region in northern Piedmont. The winery, founded in 2012, manages 4 hectares of vineyards organically, with full respect for soil biodiversity and morainic terrains rich in pebbles and glacial sands.
Grapes are carefully hand-selected and gently pressed. Fermentation takes place with indigenous yeasts in temperature-controlled stainless steel tanks, followed by 6 months aging on fine lees to enhance aromatic complexity.
Visually, the wine displays a bright straw-yellow hue with luminous reflections. On the nose, it offers an elegant bouquet of white-fleshed fruits, jasmine, orange blossom, citrus peel, and hints of aromatic herbs. On the palate, it is harmonious, sapid, fresh, and crisp, with a smooth, persistent finish.
