The Chablis Premier Cru Fourchaume 2023 comes from vineyards with south and southwest exposure, one of the sunniest areas of the appellation where grapes ripen early. The soils are mainly brown clay with light stony components, giving the wines intensity and complex mineral character.
The Chardonnay grapes are hand-harvested and fermented with indigenous yeasts, without the use of cultured yeasts. The wine is aged 12 months in stainless steel tanks, followed by 6 months in used oak barrels, with only a small proportion of new wood. Sulfur is used minimally, only after malolactic fermentation and before bottling.
In the glass it shows a bright straw-yellow color. The nose is elegant and restrained, revealing aromas of green apple, white fruit and citrus, alongside hints of almond, orange blossom and smoky minerality.
On the palate it displays a well-defined medium body, with impressive saline minerality reminiscent of oyster shells. The texture is cohesive and harmonious, supported by refined tension and a long, persistent finish.
Located in the heart of Chablis, Domaine Gérard Duplessis represents five generations of winemakers and is now run by Lilian Duplessis. The estate covers around 10 hectares of vineyards and has been certified organic since 2013, producing pure and terroir-driven wines with excellent aging potential.
