The Chablis Premier Cru Montée de Tonnerre 2023 originates from the highest part of the cru, with clay-rich soils providing intense minerality and depth. Chardonnay grapes are hand-harvested and fermented with indigenous yeasts in stainless steel tanks, where malolactic fermentation occurs naturally. The wine rests 12 months in stainless steel, 6 months on fine lees, and completes aging 6 months in oak barrels, only 10% new.
In the glass, it shows a bright straw-yellow color, dominated by mineral and chalky notes. The nose reveals citrus, floral and earthy aromas, accompanied by subtle saline hints. Young, the wine exhibits intensity and vibrant minerality; with age it develops candied fruit, vanilla, hazelnuts, toasted bread, light buttery notes, and tobacco nuances.
On the palate, it is vigorous, pulsating, and long-lived, with a cohesive chalky-mineral structure wrapped in a delicate juicy component, offering harmony, complexity, and a long saline, persistent finish.
