The Bourgogne Blanc L’Equilibriste 2023 comes from carefully tended vineyards on chalk, marl, and clay soils, farmed biodynamically. Hand-harvested with rigorous selection of clusters, the wine is gently pressed and naturally fermented with native yeasts. Aging takes place in neutral barrels and stainless steel to preserve freshness and mineral tension.
On the nose, it displays aromas of lemon zest, green apple, white peach, pear, white flowers, with subtle notes of chalk and almond. On the palate, mineral tension blends with vibrant acidity and white-fleshed fruit, complemented by delicate hints of brioche and hazelnut. The finish is savory, pure, and persistent. Enjoyable now for its liveliness, it will develop further complexity and depth over the next 3-5 years.
Pairings:
Perfect with refined yet simple dishes like oysters, scallops, grilled prawns, delicate white fish, fresh cheeses, or vegetable dishes. Serve at 10-12°C; brief decanting is recommended in the early years to enhance aroma and freshness.
