CAVES DUPLESSIS
The estate cultivates 10 hectares across about twenty plots in Petit Chablis, Chablis, Premiers Crus, and Grand Cru, each with unique characteristics. Lilian Duplessis’ philosophy emphasizes respect for the soil and terroir through certified organic viticulture since 2013, careful vineyard management, and minimal intervention. Vinification is carried out in stainless steel tanks for each plot separately, with spontaneous fermentations, natural malolactic fermentation, and minimal sulfur. Vines average 30 years of age, with some plots exceeding 75 years.
Grand Cru terroirs like Les Clos feature light clay, limestone, and marine fossils, with optimal sun exposure for full ripeness and intense minerality.
