The Chablis Premier Cru Vaillons 2023 originates from hand-harvested grapes from the Vaillons cru, rooted in clay-sandy soils that provide precision and clarity. Vinification occurs with indigenous yeasts in stainless steel, including spontaneous malolactic fermentation, without added cultured yeasts.
The wine is aged 12 months in stainless steel, 6 months on fine lees, followed by 6 months in traditional barrels, only 10% new wood. The result is a fresh, mineral, and harmonious white wine, immediately enjoyable.
In the glass, it shows a bright straw-yellow color, with aromas of exotic fruits, citrus, and white flowers, complemented by delicate minerality. On the palate, it is open and gentle, with verticality in the finish and a long, persistent aftertaste, making it a versatile choice for many occasions.
