Vin de France “Cuvée Anatole” 2023 Fanny Sabre
The Vin de France “Cuvée Anatole” 2023 is one of the most vibrant and straightforward wines crafted by Fanny Sabre, a rising figure of Beaune known for her delicate, artisanal and precise winemaking. This cuvée combines Aligoté and Chardonnay, sourced from vineyards in Sainte-Marie-la-Blanche, just south of Beaune, where clay-limestone soils bring tension, freshness and purity to the fruit.
Harvesting is entirely manual, with careful selection of the grapes. The fruit is directly pressed and vinified with no added sulphites or inputs, undergoing spontaneous fermentation with indigenous yeasts. Aging takes place for 5 months in 500-liter barrels, where Fanny uses only a minimal amount of sulphites at bottling to ensure the wine’s stability without compromising its natural expression.
In the glass, it shows a pale, clean yellow hue. The aromatic profile is bright and elegant, revealing lemon, citrus zest, green apple, white peach and gentle floral notes. The palate is linear and refreshing, combining softness with a subtle mineral tension and fine bitters on the finish. A greedy, lively, uncomplicated wine, perfect as an aperitif and ideal with light fish dishes, shellfish or aged goat cheeses.
