Erbaluce di Caluso Spumante “Cuvée des Paladins” 2015 Tappero Merlo
The Erbaluce di Caluso DOCG “Cuvée des Paladins” 2015 is produced from 100% Erbaluce grapes grown at 300–350 meters above sea level on highly acidic morainic soils composed mainly of sand, with minimal organic matter. Early harvesting preserves the natural acidity essential for a high-quality Traditional Method sparkling wine.
Primary fermentation takes place partly in stainless steel and partly in used barriques and tonneaux, followed by six months of ageing in oak to enhance texture and aromatic depth. Bottle fermentation begins in the spring following harvest, using a pied-de-cuve to initiate the secondary fermentation and ensure a refined, persistent perlage. The wine ages on its lees for at least 60 months, developing complexity and creamy structure. After careful riddling and disgorgement, it rests further in bottle before release.
Bright straw yellow with golden reflections, it shows an elegant and persistent bead. The bouquet reveals aromatic herbs, chalky minerality, delicate bread crust and dried fruit notes. On the palate it is fresh and enveloping, with vibrant citrus tension leading to a long finish marked by hints of honey, vanilla and hazelnut. A refined Italian Traditional Method sparkling wine with impressive balance and ageing potential.
