Arbois Pupillin Chardonnay “Côte Caillot” 2024 Domaine de La Borde
The Arbois Pupillin Chardonnay “Côte Caillot” 2024 from Domaine de La Borde is a striking and authentic expression of Jura Chardonnay. The grapes come from 30-year-old vines rooted in grey limestone marl soils, planted on steep south-facing slopes between 500 and 550 meters above sea level, in the renowned village of Pupillin, one of the most distinctive terroirs of Arbois.
Since 2012, the estate has been converting to biodynamic farming, focusing on soil life and vineyard balance. Harvesting is done by hand, followed by partial destemming (around 30%) to preserve freshness and precision. After gentle pressing and cold static settling, fermentation occurs naturally in 500-liter oak barrels of fifth and sixth use, ensuring the wood never dominates the wine’s expression.
A defining element of this cuvée is its extended ageing: the wine rests 24 months on the lees, allowing it to gain complexity, texture and depth while retaining vibrant acidity and energy. On the nose, it reveals white flowers and ripe, fleshy fruit, with citrus and honeyed notes, complemented by spicy nuances and a pronounced mineral backbone.
The palate is tense, saline and crisp, with a lively, mouthwatering freshness that supports a precise and focused structure. The finish is long, mineral and persistent, perfectly reflecting the shallow clay-limestone soils over limestone bedrock. A Chardonnay that is approachable yet uncompromising, offering a vivid and honest translation of its Jura terroir.
