Arbois Pupillin Chardonnay “Terre du Lias” 2024 – Domaine de la Borde
The Arbois Pupillin Chardonnay “Terre du Lias” 2024 from Domaine de la Borde is a compelling expression of Jura Chardonnay, shaped by a distinctive terroir and meticulous winemaking. The vines grow at around 450 metres above sea level on clay-limestone soils rich in Lias, a geological formation that lends the wine its signature mineral tension.
Harvested by hand, the grapes undergo gentle destemming and cold static settling. Alcoholic fermentation takes place in 600-litre oak barrels, followed by 12 months of ageing on fine lees. The wine is crafted in an ouillé style, meaning the barrels are kept completely full and sealed, preventing oxidation and preserving the wine’s purity and precision.
In the glass, it shows a bright straw-yellow colour with golden highlights. The bouquet is expressive and refined, revealing ripe white fruit, custard cream, clarified butter and flinty notes, with subtle spicy undertones. On the palate, it is velvety, rich and enveloping, supported by lively acidity and pronounced salinity, creating remarkable balance and depth. Thanks to its structure and freshness, it boasts an ageing potential of up to 15 years.
An elegant and gastronomic Chardonnay, perfectly suited to seafood, shellfish, white fish with sauces and delicately seasoned white meats.
