Cascina Ebreo Red Wine is a true reflection of the winery’s artisanal and experimental approach in the heart of the Langhe. The grapes come from a 1-hectare vineyard in the Ravera subzone of Novello, situated at 330 meters above sea level on Sant’Agata marls rich in silt and sand. Organic farming, guyot training, and careful management of vines of varying ages (from 10-year-old Dolcetto to 55-year-old Nebbiolo) ensure maximum terroir expression.
Harvesting is done by hand, followed by a double selection—first in the vineyard and then on a vibrating table in the winery. Fermentation is carried out with native yeasts, with 15-day macerations for younger varieties and whole-cluster fermentation for the older vines. Aging for 24 months in stainless steel balances freshness, structure, and harmony, allowing the wine to be enjoyed young or to evolve over time.
The result is a complex, aromatic red wine with remarkable drinkability and character.
