Vino Rosso “Incipit” 2021 Valchyara
The “Incipit” 2021 Red Wine by Valchyara is a prime example of old-vine Croatina cultivated according to Valchyusella’s artisanal viticulture principles. The vineyard spans 0.3 hectares, trained in pergola canavesana, planted in 1985, with manual harvest in early October. The sub-acid, morainic soils at 490 meters with southeast exposure allow slow, uniform ripening, giving freshness, minerality, and varietal identity to the wine.
Winemaking is natural and low-intervention: grapes undergo gentle de-stemming by gravity and stainless steel fermentation with indigenous yeasts. After alcoholic fermentation, the wine continues with spontaneous malolactic fermentation and weekly batonnage for 6 months in monolithic cement tanks, followed by 6 months bottle aging, preserving aromatic purity and freshness.
In the glass, Incipit 2021 displays a bright ruby red color. The aromatic profile is fresh and varietal, with red fruits, cherry, and forest floor notes, complemented by subtle spices. On the palate, it is balanced, with lively acidity, soft tannins, and pleasant persistence. The wine embodies Valchyara’s philosophy of producing authentic, terroir-driven reds.
