Segreto embodies the enigmatic and experimental heart of Cascina Ebreo, a red wine crafted to surprise and express the Langhe territory with intensity and character. The grapes come from a 0.6-hectare vineyard at 360 meters above sea level in the Ravera subzone of Novello, on Sant’Agata marls rich in silt and sand. North-facing exposure, organic cultivation, and guyot training provide freshness, structure, and personality.
Harvesting is done by hand, with a double careful selection—first in the vineyard and then on a vibrating table in the winery—to pick only the finest clusters. Fermentation uses native yeasts, with 30 days of skin contact to enhance the wine’s aromatic complexity and depth. Aging is elaborate: 12 months in large Austrian oak barrels, 12 months in multi-pass French oak tonneaux, and an additional 24 months in bottle, creating elegance, harmony, and persistence.
