Vino Bianco Sinché Cascina Ebreo
Sinché White Wine embodies the artisanal and experimental spirit of Cascina Ebreo. The grapes come from a small 0.4-hectare vineyard in Ravera, Novello, located at 300 meters above sea level on Sant’Agata marls with sand and silt. The guyot-trained, organically farmed vines ensure maximum terroir expression and vine health, with minimal intervention in the vineyard.
Harvesting is done by hand, followed by a careful double selection, first in the vineyard and then on a vibrating table in the winery. Fermentation occurs with native yeasts and a brief 4-hour skin contact in stainless steel, adding elegance, freshness, and complexity. Aging for 18 months in multi-pass French oak barrels provides structure and longevity without overwhelming the delicate aromatic profile, followed by one year in bottle.
The result is a reserved, profound, and characterful white wine that rewards attentive tasting. Sinché reveals itself gradually, offering unique mineral and aromatic layers, a faithful expression of the Langhe terroir and Cascina Ebreo’s artisanal, sustainable approach.
