Vino Bianco “Giallo di Chy” 2021 Valchyara
The “Giallo di Chy” 2021, produced by the winery Valchyara, embodies the unique character of the Valchiusella valley, located in the morainic amphitheater of Ivrea, Piedmont. With a production limited to just over 1000 bottles, it reflects the winery’s artisanal approach and its deep respect for biodiversity and heroic viticulture.
The winemaking process follows Valchyara’s low-intervention philosophy: the local white grapes are gently crushed and destemmed by gravity, then undergo spontaneous fermentation with about 100 hours of skin contact. This gives the wine a complex aromatic profile and light structure, while preserving its natural freshness. The wine then ages for 6 months in cement tanks and an additional 6 months in the bottle, without fining or filtration, ensuring purity and authenticity.
In the glass, it shows a bright yellow color with golden hues. On the nose, it reveals a fragrant bouquet of ripe yellow fruits, broom and chamomile flowers, with subtle spicy hints. The palate is lively, mineral and dynamic, marked by a crisp acidity and a saline backbone that defines the sip from start to finish.
