Vino Rosso “Clandestino” 2021 Valchyara
The “Clandestino” 2021 Red Wine by Valchyara is a pinnacle of heroic viticulture in Valchyusella. Produced from a single native red grape, it grows on sub-acid, morainic soils at 490 meters, southeast-facing, where cool and ventilated conditions allow slow maturation, balancing fruit, acidity, and minerality.
Winemaking is minimal-intervention and artisanal: grapes undergo gentle crushing by gravity, with 30% left as whole clusters, and ferment spontaneously with indigenous yeasts. A small 5% of dried grapes is added at the end of primary fermentation to enhance depth and aromatic complexity. The wine then ages for 17 months in second-use French oak barrels, unfiltered and unfined, preserving the purity of fruit and terroir.
In the glass, Clandestino 2021 shows an intense ruby red color. The aromatic profile is complex and evolving, with delicate fruit notes interwoven with subtle spice, floral, and mineral hints. On the palate, it is structured and harmonious, featuring circular tannins, a pronounced saline streak, and vibrant acidity, highlighting its drinkability and aging potential. Fruit is present but never dominant, giving prominence to minerality and elegance.
The “Clandestino” 2021 Red Wine by Valchyara is perfect for those seeking an authentic, terroir-driven red wine with character. Ideal with red meats, medium-aged cow’s cheeses, or enjoyed on its own to appreciate its complexity and originality.
