Vouvray Brut Domaine Vincent Carême
The Vouvray Brut Domaine Vincent Carême is one of the finest examples of Loire sparkling winemaking, highlighting the purity and complexity of the Chenin Blanc grape. The vines, aged between 20 and 60 years, are planted on a distinctive terroir of clay, flint, and limestone, located on the first slopes facing west towards the Brenne valley. Produced following the traditional method, the winemaking process begins with alcoholic fermentation in temperature-controlled tanks, leaving a natural residual sugar of around 18 g/l. Before bottling, 10-15% of reserve wine is added, enhancing depth and consistency. The second fermentation takes place in bottle, followed by 12 to 24 months of lees aging, which imparts complexity and finesse. After disgorgement, the wine is released without dosage, preserving its natural freshness and precision.
