Rossese di Dolceacqua DOC “Pini” 2024 Maccario Dringenberg
The Rossese di Dolceacqua “Pini” 2024 comes from a specific vineyard within the Pini MGA in San Biagio della Cima. The site faces east at around 250 meters above sea level and is rooted in calcareous rock belonging to the Ventimiglia Flysch formation, of marine origin, which enhances the wine’s salinity and mineral tension.
Vines are trained in traditional Provençal bush system with an average age of 50 years and a density of 4,500 plants per hectare.
Fermentation occurs in stainless steel at approximately 27°C, followed by an extended 35-day skin maceration with pump-overs and délestage, resulting in greater structure and aromatic depth compared to the standard Rossese. Malolactic fermentation and ageing are carried out in stainless steel, preserving varietal clarity and freshness.
The nose reveals intense spice and dark fruit notes. On the palate it is broader and more structured, supported by vibrant acidity and pronounced salinity. Soft yet energetic, it delivers complexity and balance with strong territorial character.
