Version Sud Frédéric Cossard
Version Sud is Frédéric Cossard’s ode to the radiant soul of Southern Rhône. Sourced from 20-year-old Grenache vines grown on clay and limestone soils in Vaison-la-Romaine near Mont Ventoux, this wine reflects the harmony of organic and biodynamic farming—no herbicides, no chemicals, horse-plowed soils and hand-harvested grapes.
Whole bunches undergo natural fermentation with wild yeasts for about 15 days, followed by nine months in vat (sometimes concrete egg), with no fining, no filtration and no added sulphur. The wine is pure, vibrant and full of red and black berries, Mediterranean herbs and saline minerality.
On the palate, it offers elegance, freshness and silky tannins, delivering a fine and focused expression of Grenache from the South, elevated by Cossard’s Burgundy savoir-faire.
