Trentodoc Brut Abate Nero
The Trentodoc Brut by Abate Nero is the signature label of the winery, a pure expression of 100% Chardonnay from Trentino’s finest high-altitude vineyards. Produced using the Traditional Method and aged for at least 24 months on the lees, it offers freshness, finesse, and unmistakable aromatic precision.
Grapes come from selected plots located between 200 and 800 meters above sea level, stretching from the northern shores of Lake Garda to the Val di Cembra, an area renowned for mountain viticulture. The cool alpine climate and significant temperature shifts contribute to vibrant acidity and complexity in the base wines.
After a gentle pressing to extract only the first-run juice, the base wines ferment in stainless steel tanks under temperature control. Following a period of rest, the cuvée is assembled and bottled for secondary fermentation, with a long lees aging period of at least two years.
In the glass, it displays a pale straw yellow hue with greenish highlights and a fine, persistent mousse. The bouquet opens with white flowers, citrus zest (lime, grapefruit), crisp orchard fruits, and subtle yeasty notes like almond, hazelnut, and bread crust. The palate is vibrant, mineral, and ends on a salty, citrus-driven finish.
Ideal as an elegant aperitif, it pairs beautifully with raw seafood, light fish dishes, vegetable appetizers, or fine tempura-style fry-ups. A refined and versatile sparkling wine that reflects the precision of Trentino’s mountain terroir.
