VdF “Les Chassagnes” 2023 Tony Bornard
“Les Chassagnes” 2023, crafted by Philippe and Tony Bornard, comes from the village of Pupillin, in the heart of the Jura, a region renowned for its highly expressive and terroir-driven wines. This cuvée is made from 100% Savagnin, the emblematic grape of the area, here vinified in a non-oxidative style that highlights purity, freshness and structural tension.
The vines are planted on blue marl soils, one of the most distinctive geological formations in the Jura. These soils contribute to the wine’s pronounced minerality, saline character and firm structural backbone. Harvesting is carried out manually, in line with the domaine’s natural and respectful vineyard philosophy.
Winemaking involves a long and slow maceration in fiberglass tanks, followed by ageing in a combination of oak and stainless steel vats. This dual approach preserves aromatic clarity while adding complexity and texture. No sulphites are added, reflecting the Bornard family’s commitment to a minimal-intervention, natural winemaking approach.
In the glass, the wine shows a bright and pure appearance, reflecting its non-oxidative vinification style. The nose is precise and layered, offering citrus zest, white stone fruit, wild flowers and a distinct chalky minerality, complemented by subtle herbal and saline nuances.
On the palate, it is tense, vertical and deeply mineral-driven. The structure is firm yet agile, supported by vibrant acidity that extends the wine’s progression. A pronounced saline edge adds depth and definition, leading to a long, clean and highly focused finish.
“Les Chassagnes” embodies the Bornard philosophy: absolute respect for terroir, minimal intervention and pure varietal expression. It is a wine that combines energy, precision and complexity, working equally well as a gastronomic aperitif or paired with refined seafood and structured cuisine.
