“Le Blanc de La Rouge” 2018 by Tony Bornard comes from the Jura, a region where Chardonnay develops a distinctive personality marked by minerality, tension and often a subtle oxidative nuance. This cuvée reflects the domaine’s artisanal philosophy, focused on minimal intervention and a pure expression of terroir.
Winemaking begins with direct pressing of whole clusters, followed by spontaneous fermentation. Ageing takes place partly in large oak casks (around 2,400 liters) and partly in tanks, a dual approach that preserves freshness while adding depth, texture and complexity.
The grapes grow on limestone-marl soils, which strongly shape the wine’s profile, giving it structure, precision and a pronounced saline character. The result is a dry, concentrated Chardonnay that combines richness with a vibrant sense of energy.
In the glass, the aromatic profile is layered and expressive: candied citrus, white flowers, almond, gentle spices and mineral notes, accompanied by a subtle oxidative touch typical of great Jura whites. Ripe fruit is integrated with earthy and savory undertones, creating depth and complexity.
On the palate, the wine is full-bodied, lively and dynamic, supported by a clear and persistent freshness. Notes of apple, pear and citrus unfold over a textured, saline backbone that extends the wine’s progression. The finish is long, savory and highly persistent, leaving a vibrant and mouthwatering impression.
