The vineyards are planted on limestone-rich soils, whose mineral composition gives the wine its unmistakable freshness, tension and saline character. Farming follows organic and biodynamic principles, while the cellar philosophy embraces spontaneous fermentations with indigenous yeasts and minimal intervention, allowing every vintage to express its natural personality without manipulation.
In the glass, the wine displays a bright straw-yellow colour. The nose is elegant and constantly evolving, revealing aromas of ripe pear, crisp apple, citrus fruits, white blossoms and subtle chalky notes, complemented by hints of flint and delicate maritime nuances that speak directly of the limestone terroir.
The palate is both generous and remarkably precise. A rich core of orchard fruit is perfectly balanced by vibrant acidity and an impressive mineral backbone. Layers of pear, apple and citrus unfold into a long, energetic finish marked by remarkable freshness, salinity and persistence.
