Trentodoc Dosaggio Zero Abate Nero
The Trentodoc Dosaggio Zero by Abate Nero is a Traditional Method sparkling wine made with Chardonnay and a small percentage of Pinot Noir. With no sugar added at disgorgement, this wine expresses the full character of its alpine terroir with utmost precision and elegance.
Grapes are selected from high-altitude vineyards, ranging between 200 and 800 meters above sea level, spanning various areas of Trentino—from the northern shores of Lake Garda, through the hills bordering South Tyrol, up to the iconic terraced slopes of Val di Cembra. These sites provide the perfect conditions for slow ripening and aromatic complexity.
The base wines are vinified separately in stainless steel tanks after a gentle pressing, then aged briefly before bottle fermentation and a 24-month aging on lees. The wine is disgorged with zero dosage, highlighting its linear, dry and mineral structure.
In the glass, it shows a bright straw-yellow color with greenish hues and a fine, persistent mousse. The nose is subtle and refined, offering notes of orange blossom, lemon peel, green apple, white peach, yellow melon, hints of bread crust and toasted almonds. On the palate, it’s tense and sharp, with crystalline minerality, firm structure and a vibrant, salty-citrus finish.
An ideal pairing for raw seafood, sashimi, ceviche, oysters, or vegetarian haute cuisine. A must-try for lovers of no-dosage sparkling wines and alpine finesse.
