Erbaluce di Caluso Spumante “Nature” 2018 – Cieck
The Erbaluce di Caluso Spumante “Nature” 2018 represents the most authentic and refined expression of Cieck’s philosophy. It is the Pas Dosé cuvée, strongly desired by Lia, the “feminine soul” of the winery, who wanted a sparkling wine without compromise — one that fully reflects the minerality, acidity, and purity of Erbaluce. First presented in 2017 with the 2013 vintage, “Nature” has quickly become a symbol of elegance and identity for Cieck.
The grapes come from moraine soils located around 320 meters above sea level, with south-east exposure and vines averaging 30 years of age. This unique terroir, rich in minerals, gives the fruit its vibrant acidity and aromatic finesse. After gentle whole-cluster pressing, fermentation takes place in temperature-controlled stainless steel tanks. The second fermentation occurs in the bottle following the Metodo Classico, with an aging of 48 months on the lees. During this time, the wine develops a deep, complex bouquet of white fruit, toasted bread, and subtle yeasty notes. Manual rémuage and disgorgement complete the artisanal process.
In the glass, it displays a bright straw-yellow color and an extremely fine, persistent perlage. The nose is elegant and precise, with aromas of ripe white fruit, hints of minerality, and delicate notes of yeast and bread crust. On the palate, it is structured and vibrant, with a clean, taut acidity and a savory, persistent finish that highlights its terroir-driven character.
With no dosage, this Pas Dosé Metodo Classico is a pure and truthful interpretation of the Erbaluce grape — refined, mineral, and full of life. Ideal as a sophisticated aperitif or alongside fish, seafood, and raw shellfish, it perfectly embodies the finesse and authenticity of Cieck’s sparkling wines.
