Carema Riserva 2020 Cantina Togliana
The Carema Riserva from Cantina Togliana is one of the finest expressions of Nebbiolo grown in the rugged mountain vineyards of Alto Piemonte, where winemaking is both a challenge and an art. It comes from the spectacular terraced slopes of Carema, a tiny alpine village at the border with the Aosta Valley, where heroic viticulture has been practiced for centuries.
Produced only in the best vintages, this Riserva is made from 100% hand-harvested Nebbiolo grapes grown between 300 and 600 meters above sea level, on steep terraces supported by dry stone walls. The wine undergoes long aging, with at least 36 months of maturation, partly in large oak casks and the rest in bottle, allowing it to reach its full aromatic and structural complexity.
In the glass, it shows a luminous garnet color with hints of orange on the rim. The bouquet is layered and expressive, offering aromas of dried rose, red cherry, wild herbs, iron, balsamic notes, black pepper, orange zest, and tobacco. On the palate, it is linear, fine, and vibrant, driven by mountain freshness, finely integrated tannins, and a long, mineral finish. A wine with strong identity and impressive aging potential.
Recommended pairings: braised meats, game, roast beef, aged cheeses. A contemplative red wine, also excellent on its own.
