Bourgogne Aligoté 2023 Sylvain Pataille
The Bourgogne Aligoté 2023 from Sylvain Pataille is widely regarded as one of the finest examples of Aligoté produced in Burgundy today. Through the work of visionary winemakers such as Pataille, this historic grape variety has gained renewed recognition, proving capable of producing wines of exceptional character, complexity and terroir expression.
The fruit comes from vineyards planted more than 50 years ago, providing naturally low yields and impressive concentration. Approximately 60% of the grapes originate from the Champ Forey parcel, where limestone and gravel dominate the soil composition, while the remaining 40% comes from Auvonnes, a site characterised by clay, marl and small stones. Together, these vineyards create a wine of remarkable balance, energy and mineral depth.
The vineyards are managed under certified organic farming practices complemented by biodynamic methods. In the cellar, Sylvain Pataille follows a low-intervention philosophy, relying on native yeast fermentations, gentle handling and only minimal sulphur additions to preserve purity and authenticity.
In the glass, the wine displays a bright straw-yellow colour with delicate golden reflections. The aromatic profile is strikingly mineral, revealing notes of sea spray, wet stone, citrus zest and white peach, supported by subtle floral and chalky nuances.
The palate is defined by extraordinary tension and precision. Vibrant acidity and pronounced salinity create a vertical, energetic structure, while the fruit remains beautifully integrated. Despite its freshness and focus, the wine also offers texture and depth, leading to a long finish marked by mineral and citrus-driven persistence.
An outstanding choice as an aperitif, it pairs beautifully with oysters, shellfish, raw fish, sushi, fresh cheeses and seafood dishes. A world-class Aligoté that highlights both the unique terroirs of Burgundy and the exceptional talent of Sylvain Pataille.
