The 2022 Savigny‑lès‑Beaune 1er Cru Les Peuillets comes from a historic 0.54 ha parcel situated on an alluvial fan at 240 m elevation, featuring gravelly, clay-limestone soils with excellent drainage . Planted in 1998–99, these organic (non-certified) vines undergo hand-harvesting with double sorting in both vineyard and winery. The wine is fermented naturally with 40–60% whole clusters over a 10–14‑day infusion, then aged 11–16 months in French oak barrels (15–25% new), with no fining and minimal filtration .
Aromatically, it greets you with seductive aromas of red and black berries — cherry, raspberry, blackcurrant — layered with gentle spices and floral touches . On the palate it’s generous yet balanced, smooth in structure, with fine tannins, bright freshness and salinity guiding a long and refreshing finish . Its poised elegance makes it drinkable now, yet with rewarding mid-term ageing potential.
Winemaker Jean‑Baptiste Boudier, educated in Beaune, Bordeaux and New Zealand, launched his domaine in 2015. His minimalistic, terroir-driven approach emphasizes native fermentations, calibrated extraction prioritizing structure over color intensity, and avoids pre-fermentation cold soaking.
