Savigny-Lès-Beaune 2023 Fanny Sabre
The Savigny-Lès-Beaune 2023 is one of the most charming expressions from Fanny Sabre, a rising star of the Côte de Beaune. The wine comes from 30-year-old Pinot Noir vines planted on classic clay-limestone soils within one of Burgundy’s most historic appellations, dating back to ducal estates, monastic vineyards and the Knights of Malta. The gentle slopes between 250 and 400 meters lend the wine natural freshness and a lifted aromatic profile.
In the cellar, Fanny follows a minimalist, precise approach: manual harvest, direct pressing and fermentation through gentle infusions, with no added sulphites or inputs. Fermentation is carried out with indigenous yeasts, while aging takes place for 12 months in 228-liter Burgundian barrels, with only a tiny addition of sulphites at bottling to ensure stability. Production remains extremely small, around 1,000 bottles, underscoring the artisanal nature of this cuvée.
In the glass, it displays a crimson-red color with subtle pink and violet highlights. The aromatic profile is both bright and complex, offering blackcurrant, cherry, raspberry, wild blackberry, violet florals and soft sweet spices. On the palate, it combines succulence, elegance and energy, supported by fine tannins and a balanced structure leading to a long, graceful finish. Perfect with roast poultry, white meats, beef tartare or soft cheeses, this wine has an aging potential of up to 7 years.
