Erbaluce di Caluso DOCG Metodo Classico Brut 2019 – La Campore
The Erbaluce di Caluso DOCG Metodo Classico Brut 2019 by La Campore celebrates one of Piedmont’s most distinctive native varieties. The 30-year-old vines, trained with the traditional pergola system, grow on half a hectare of morainic soils rich in minerals. Vineyard management follows sustainable principles: spontaneous grass is mowed, pruning residues are shredded and left in the vineyard to naturally enrich the soil, and pest control relies on organic or low-impact products as per Piedmont’s integrated agriculture standards.
Harvested by hand in early September, the grapes undergo gentle pressing and fermentation at controlled temperatures. The wine then rests for about seven months in stainless steel and oak, gaining texture and depth. The second fermentation in bottle follows the Metodo Classico process, with nearly three years of ageing on the lees in the historic Masino Castle cellars, where it slowly develops its elegant aromas and creamy finesse.
In the glass, it shines with a straw yellow hue and a persistent, fine mousse. The bouquet recalls green apple, wildflowers, and subtle hints of bread crust. The palate is fresh, dry, and mineral-driven, with a lingering finish that reflects the purity of Erbaluce. Perfect as an aperitif or paired with seafood, shellfish, and delicate starters. Only 2,600 bottles were produced — a rare, artisanal expression of Canavese’s excellence signed by La Campore.
