The art of expressing Erbaluce: the philosophy of Ilaria Salvetti

Located in Caluso, north of Turin, the Ilaria Salvetti Winery represents the essence of the Canavese region, historically dedicated to the cultivation of Erbaluce, one of Piedmont’s oldest white grape varieties. The Salvetti family’s story began with grandfather Talin, who crafted wine for family and friends. In 2005, Carlo Salvetti transformed this heritage into a professional winery, expanding the vineyards and focusing on quality production. With Ilaria, the third generation, the estate embraced a vision of sustainability, spontaneous fermentations, and complete respect for biodiversity.

The vineyards, covering about 4 hectares of morainic soils at 350 meters above sea level, offer the perfect environment for Erbaluce: mineral-rich grounds, sharp day-night temperature changes, and constant ventilation. Certified organic since 2016, the estate’s philosophy has always centered on harmony with nature. All vineyard work, from pruning to harvest, is carried out by hand, with careful grape selection.

Fermentation occurs naturally with indigenous yeasts, and aging takes place in stainless steel or small oak barrels. The estate’s crown jewel is the Caluso Passito, crafted from handpicked grapes left to dry on bamboo mats for around three months. The resulting nectar matures for 60 months in oak, yielding a wine of stunning complexity, balancing sweetness, freshness, and depth. Alongside the passito, the winery produces refined still and sparkling Erbaluce, each a genuine reflection of its terroir and the graceful hand of its winemaker.
