Trentodoc Millesimato “Domini” 2016 Abate Nero
The Domini Brut 2016 by Abate Nero is a prestigious vintage Traditional Method sparkling wine, made entirely from Chardonnay grapes grown in the Trentino hills. Aged for over 70 months on the lees, this Trentodoc delivers remarkable elegance, depth and aromatic richness, reflecting the style and precision of one of the most respected wineries in the region.
Grapes are sourced from high-altitude vineyards near Trento, where cool alpine climates and mineral-rich soils offer perfect conditions for sparkling wine. After gentle pressing and fermentation in stainless steel, the wine is bottled for secondary fermentation, then rests sur lie for nearly six years, developing complexity and structure.
In the glass, it shows a deep golden color with fine, persistent bubbles. The nose reveals notes of candied citrus, bergamot, yellow apple, peach, toasted hazelnuts, brioche, and wet stone minerality. The palate is rich and balanced, with a creamy mousse, ripe fruit, and a long, saline, citrus-driven finish.
A sparkling wine to savor on special occasions, it pairs beautifully with lobster, roast fish, poultry, or even on its own as a meditation wine.
