The Saint-Aubin La Princée 2023 is a pure expression of the Côte de Beaune, made from Chardonnay grapes grown on approximately 3 hectares of vineyards located on the western slopes of Saint-Aubin. The vines, planted between 1985 and 2000, thrive on clay-limestone soils, giving the wine its signature minerality and finesse.
Vineyard practices follow a sustainable approach, focusing on biodiversity and preserving the natural balance of the terroir.
In the cellar, winemaking is precise and minimal intervention. The grapes are gently pressed and fermented slowly in oak barrels (barrique and tonneaux) under controlled temperatures. Malolactic fermentation takes place in wood, followed by aging on fine lees with light bâtonnage to enhance texture and complexity. The wine is aged for 12 to 18 months before bottling.
In the glass, it shows a bright straw yellow color. The nose reveals aromas of apple, pear, citrus and white flowers, with subtle mineral notes and delicate buttery hints.
On the palate, it is elegant and well-balanced, with vibrant acidity and a defined mineral backbone. The finish is persistent and refined, with lingering fruity and saline notes.
Perfect with grilled or baked fish, shellfish, scallops, poultry, mushroom dishes and soft to semi-aged cheeses.
