Dogliani “Papà Celso” 2021 - Marziano Abbona
The Dogliani “Papà Celso” 2021 is the emblematic expression of the Abbona family’s passion and the deep roots that tie them to Dogliani’s hills. Dedicated to Celso Abbona, who personally planted each vine in the Doriolo vineyard, this wine embodies the legacy of a family and a territory. Made exclusively from old Dolcetto vines—many over 60 years of age—it shows remarkable depth, concentration and harmony. The grapes come from calcareous marl soils that lend natural richness and a distinctive mineral tension to the fruit.
Fermentation takes place naturally with indigenous yeasts, followed by gentle maceration to enhance structure and aroma without compromising the wine’s innate freshness. The malolactic fermentation is fully completed in stainless steel, where the wine remains to refine for several months before bottling, preserving its purity and varietal character.
In the glass, it shines a vivid ruby red hue with purple reflections. The nose opens with cherry, plum, blackberry, violet, and delicate hints of almond and spice. On the palate, it’s full-bodied yet graceful, with a juicy core of fruit framed by fine, well-integrated tannins. The balance between structure and freshness gives it great drinkability, while the long finish reveals elegance and depth.
“Papà Celso” stands as one of the finest interpretations of Dolcetto: authentic, expressive, and capable of ageing beautifully. It pairs wonderfully with rich pasta dishes, white meats, or medium-aged cheeses, and is best enjoyed at around 16–18 °C.
