Metodo Ancestrale Rosato “Demora” Alberand
The Demora Rosato Frizzante Ancestrale by Alberand is a genuine and expressive natural wine crafted using the ancestral method, a traditional technique that emphasizes purity and authenticity. Made from aromatic red grapes grown at 350 meters above sea level on alluvial soils rich in clay and silt in the Salassa area, this rosé captures the freshness and energy of its alpine foothill terroir.
After manual harvesting, the grapes are destemmed and directly pressed, followed by a cold settling phase to clarify the must. Fermentation takes place with selected yeasts in stainless steel tanks, preserving the fruit’s freshness and aromatic character. The secondary fermentation occurs naturally in the bottle, reaching around 2.5 bar of pressure, and the wine is then aged for two months in bottle before release.
In the glass, Demora shows a delicate pale pink color with subtle orange reflections and a fine, persistent mousse. The nose is fresh and fragrant, with notes of wild strawberries, citrus zest, and floral hints, while the palate offers crisp acidity, savory minerality, and a dry finish.
