The Côtes du Jura Savagnin Cuvée Romane 2023 is a refined expression of one of the Jura's most distinctive grape varieties. Through this cuvée, Eric Thill highlights the authentic personality of Savagnin, favouring clarity, balance and a transparent interpretation of the vineyard.
Winemaking is designed to preserve the grape's natural freshness and aromatic purity. Oak ageing adds texture and depth without masking the wine's identity, resulting in a white wine that remains focused, energetic and true to its origin.
Bright golden yellow in colour, it opens with aromas of green apple, pear and lemon zest, followed by delicate notes of white flowers, dried jasmine, pollen and subtle iodine nuances that reflect the limestone soils of the Jura.
The palate is fresh, finely textured and driven by pronounced saline minerality. Its balanced structure and vibrant acidity create a precise, linear progression that finishes long, clean and persistent, with lingering citrus and mineral notes.
Versatile at the table, it pairs beautifully with seafood starters, shellfish, grilled fish, seasonal vegetables, delicate risottos and fresh cheeses. While particularly enjoyable in its youth, it also has the structure to evolve gracefully over the coming years.
