The Côtes du Jura Mosaïque 2025 brings together the three emblematic red grape varieties of the Jura—Poulsard, Pinot Noir and Trousseau—each contributing equally to a wine built on balance, elegance and transparency. The name Mosaïque reflects this harmonious blend of varieties and terroirs, expressing the diversity of the region in a single cuvée.
The vineyards grow on clay, chalk and the Jura's distinctive iridescent marl soils, which give the wine its characteristic freshness and mineral precision. Guided by a minimal-intervention philosophy, Eric Thill focuses on preserving varietal purity and the authentic expression of place.
Fermentation takes place spontaneously with whole clusters, enhancing aromatic complexity and refining the wine's delicate structure. Ageing in stainless steel maintains freshness and vibrancy, allowing the fruit to remain at the forefront.
Brilliant light ruby in colour, it opens with aromas of wild strawberry, blueberry and fresh red berries, followed by subtle notes of violet petals and a delicate hint of black pepper.
The palate is light-bodied, juicy and beautifully balanced. Fine tannins and lively acidity create an effortless flow, while the clean, savoury finish highlights the wine's freshness and remarkable drinkability.
A versatile partner at the table, it pairs naturally with charcuterie, poultry, roasted vegetables, mushrooms and semi-aged cheeses. Best served slightly chilled, between 14 and 16 °C, to fully appreciate its vibrant aromatic profile.
