Vin Jaune 2016 stands among the most iconic wines of the Jura, embodying a centuries-old tradition found nowhere else in the world. Produced exclusively from Savagnin, an ancient grape variety cultivated in the region for more than nine hundred years, it reflects a unique relationship between terroir and time.
Its singular character comes from the traditional sous voile ageing process. The wine rests in oak barrels for more than six years without topping up, allowing a natural veil of yeast to form on the surface. This slow oxidative maturation develops extraordinary aromatic complexity while preserving freshness, structure and remarkable longevity.
The bouquet opens with notes of hazelnut, green almond, dried hay, preserved lemon, subtle spice and delicate aromas reminiscent of fino sherry, the hallmark of Vin Jaune. On the palate it is dry, concentrated and intensely savoury, supported by vibrant acidity and a remarkably persistent finish with refined nutty nuances.
Thanks to its oxidative style, Vin Jaune remains exceptionally stable even after opening. It pairs beautifully with alpine cheeses such as Comté, charcuterie, mushrooms, shellfish and refined poultry dishes. A distinctive gastronomic wine that rewards patience and continues to evolve for decades.
