The Malvasia Istriana from Damijan Podversic is undoubtedly one of the most profound and expressive Italian white wines. Created by Damijan, a gifted winemaker and pupil of Josko Gravner, this wine embodies the perfect harmony between terroir, grape, and traditional winemaking techniques. The grapes are sourced from the vineyards of Gradisciutta and Monte Calvario, planted on Ponka soils, the typical sandstone marl of the region, providing minerality and structure. The viticulture is organic, with minimal intervention, and grapes are harvested at full phenolic ripeness to ensure intensity and aromatic complexity.
Winemaking involves spontaneous fermentations and skin macerations lasting 60–90 days in oak vats, extracting full aromas and body without compromising elegance. The wine then ages 36 months in large oak barrels, followed by at least 12 months in the bottle before release. This extended process gives the Malvasia extraordinary depth, a complex and persistent bouquet, and a balanced structure combining softness, acidity, and minerality.
In the glass, it shows an intense golden color with orange highlights. The nose is deep and inviting, with aromas of ripe apricot, chamomile, orange peel, aromatic herbs, and honey, complemented by refined mineral notes. The palate is full-bodied, harmonious, and elegant: richness and volume are balanced by freshness and salinity, creating a truly symphonic tasting experience. Malvasia Podversic is a “universal” wine, capable of appealing to both novices and connoisseurs, perfect alone or paired with refined fish dishes, shellfish, white meats, and aged cheeses.
