Spumante Metodo Classico Extra Brut – Marziano Abbona
The Metodo Classico Extra Brut by Marziano Abbona is the result of years of experience and a deep passion for sparkling winemaking that began more than twenty years ago, when the first rows of Pinot Noir and Chardonnay were planted on the gentle hills surrounding the winery. Today, these vines offer perfectly balanced grapes, ideal for producing a Metodo Classico of remarkable finesse and concentration.
The vinification starts with a gentle pressing to obtain only the finest part of the must, followed by static clarification and a slow alcoholic fermentation at a controlled temperature (15°–18°C). After several months of aging, the wine undergoes tirage, with the addition of selected yeasts to start the secondary fermentation in the bottle, lasting 40–60 days at 14°–16°C — a key step that develops the fine, persistent bubbles characteristic of this style.
The malolactic fermentation is not carried out, preserving the wine’s tension and bright acidity. The wine then ages for a long time on the lees, gaining texture, aromatic depth, and complexity. The disgorgement is performed without any liquer addition, highlighting the natural expression of the fruit and the Langhe terroir.
In the glass, it shows a bright straw-yellow color with a fine, continuous perlage. The bouquet reveals notes of bread crust, yeast, hazelnut, and white flowers, along with subtle fruity hints. On the palate, it’s creamy, well-balanced, and fresh, finishing with a pleasant sapid and mineral touch. Its lively acidity makes it a versatile sparkling wine — ideal as a refined aperitif or paired with fish, charcuterie, vegetable flans, and white meats.
A sparkling expression that reflects the pursuit of purity and elegance by the Abbona family, and one of the most refined Metodo Classico interpretations from the Langhe.
