Sauvignon Mock 2020, crafted by Cantina Produttori di Bolzano, is a fine expression of Sauvignon Blanc from Alto Adige, showcasing the harmony between grape, terroir, and mountain climate. The grapes are grown on steep, sun-drenched slopes at 500 meters above sea level near Bolzano, where cool alpine breezes enhance aromatic development.

Carefully selected grapes undergo gentle pressing, temperature-controlled fermentation, and maturation in stainless steel, preserving the variety’s vibrant character.

Bright straw-yellow in color with green reflections, this Sauvignon presents an expressive bouquet of tomato leaves, nettle, green pepper, and mint, along with yellow peach, pink grapefruit, elderflower, and acacia blossoms. As it ages, it reveals mineral notes and a hint of flint.

The palate is fruit-driven and structured, with a lively acidity and long, clean finish. Ideal as an aperitif, it pairs beautifully with asparagus, light vegetarian dishes, herb-based cuisine, and fish.
