Roero Oesio Magnum 2015 Enrico Serafino
Produced from hand-selected Nebbiolo grapes from vineyards in Oesio, Canale, trained with the Guyot system on sandy and clay soils with south, southwest, and southeast exposures, and vines aged 15 to 30 years.
Harvested manually in ventilated crates, the grapes are handled delicately to preserve freshness, avoiding oxidation through carbonic snow and without using pumps.
Fermentation takes place in temperature-controlled large wooden conical vats, with a long maceration of over 25 days enhanced by délestage and submerged cap techniques, extracting the typical complexity and structure of Nebbiolo.
The wine ages for 18 months in medium-sized oak barrels and some barriques, resulting in elegant structure, soft tannins, and a long, persistent finish.
It shows an intense ruby red color with orange hues and aromas of red fruit, spices, and coffee, with excellent nose-to-palate harmony.
This Roero DOCG is a significant wine, produced in limited quantities only in outstanding vintages, expressing the unique character of Nebbiolo from the Oesio terroir in Canale.
Pairs perfectly with pasta dishes, porcini mushroom risotto, aged cheeses, truffles, and dark chocolate shavings for dessert.
