Made from hand-selected 100% Pinot Noir grapes, the Alta Langa Brut Millesimato Zero by Enrico Serafino epitomizes the finest traditional method sparkling wines from the Alta Langa DOCG. Sourced from vineyards averaging 20 to 25 years old in Mango, Loazzolo, and Bubbio, this vintage wine is aged on lees for at least 60 months with limited disgorgements, enhancing its aromatic complexity and structure.
The winemaking process is delicate, with pressing in an inert nitrogen environment and fermentation in temperature-controlled stainless steel tanks, followed by six months on lees with bâtonnage to build body and depth. The secondary fermentation is done via the classic method without any dosage, making it a true Pas Dosé (Zero dosage) sparkling wine, unique and authentic.
In the glass, it shows a light straw yellow color with fine, persistent bubbles. The nose is broad and complex, featuring linden flowers, honey, ripe white fruit, citrus, and bread crust notes.
