MoreCantina 366 is one of the most interesting emerging wineries in Canavese, founded in 2013 by a group of friends united by their passion for wine and the desire to combine technological expertise with respect for the land. The first challenge was the restoration of a farmhouse and abandoned vineyards in Bairo, near Agliè, in the historic territory of Erbaluce di Caluso. Dedication to manual vineyard work and respect for local traditions blend with innovative winemaking techniques, including controlled steel fermentation and careful aging to enhance the aromatic and mineral characteristics of the grapes.
Cantina 366 produces three main types of wine: still whites, Classic Method sparkling wines, and dessert wines, all from the Erbaluce grape, native to Canavese. Careful vineyard management, from pruning to hand harvesting, and attention to the surrounding ecosystem ensure fresh, vertical wines with a strong sense of place. Since 2020, the winery has joined the “Giovani Vignaioli Canavesani” association, promoting a network of producers focused on sustainability, tradition, and innovation.
The philosophy of Cantina 366 is reflected in the labels and names: “Scelte di Vite” (Choices of the Vine) reminds everyone that every decision in the winery is rooted in respect for the land and the care of the vines, enhancing the inseparable relationship between humans and nature. The wines tell the story of Canavese, an ancient viticultural land, home of the Erbaluce di Caluso DOCG, the first DOC in Piedmont since 1967, awarded DOCG in 2010.
